Carrots Fresh

Shredded Carrot, Beet and Mint Salad

 

Winter is the season for roots. Roots are also about the heritage and history that our farmers and ranchers bring with them every week to the market.Enjoy this recipe fresh from your farmers’ market to your table. Chef Alain.

Servings: 4

Ingredients

– 2 Tbsp freshly squeezed orange juice

– 2 tsp freshly squeezed lime juice

– 1 Tbsp extra-virgin olive oil

– ½ tsp minced fresh ginger

– 1/2 tsp minced fresh garlic

– 2 pinches sea salt

– 1 cup peeled and shredded fresh carrots

– 1 cup peeled and shredded fresh red beets

– 2 Tbsp fresh mint, chopped. Save three leaves for decoration.

Procedure

1. Whisk orange juice, lime juice, olive oil, ginger, garlic and salt together until thoroughly combined.

2. Grate the carrots and beets into a large mixing bowl. Add chopped mint.

3.Drizzle your dressing over the grated roots/mint. Toss together gently.

4. Decorate the top of your salad with a few fresh mint leaves. Bon Appetit!

Chef’s tip: If you prefer this salad warm, steam your grated carrots and beets for 5-6 minutes until al dente. Place in a mixing bowl and add chopped mint. While still hot, drizzle your dressing over them and toss together gently.
