One sample review:

“When you have enough basic Paleo recipes under your belt and are looking for a way to bring excitement to your table, look no further than Chef Alain Braux’s ‘Paleo French Cuisine’. A must try is the Beet Soup with Crunchy Bacon. It’s absolutely delicious, and will make a beet lover out of even those who say they detest beets (brought on by memories of the canned ones that their mothers served). With oven baked bacon as a garnish, a truly delicate beet flavor really shines through. The cumin is a nice counterpoint that stays in the background. The soup is also a beautiful magenta color and looks amazing against whatever color bowl you serve it in, even glass, and would make a wonderful presentation at a dinner party. Other winners are the Texas Turkey Meatloaf (Chef Alain now lives in Austin TX), Mushroom Soup (with bacon, sense a pattern here?) and the Warm Moroccan Carrots. Chef Alain includes a lot of Paleo and nutrition knowledge and the recipes are as much a delight to the eye as to the palate. Paleo French Cuisine is a winner to add to your cooking library.”

From the people that brought you Food, Inc., one of my favorite healthy food movies, we are faced with an ugly truth. This country’s children are not fed properly.

Soon, if we don’t do something about it, one of every two children in this country will be on food stamps.

How did the richest and most powerful country in the world allow that to happen?

Charity is doing its best to cover this need but it is not enough. There is so much private donations can do.

Can our government do something about it? It did once in the 70s and it can do it again if we demand it. We need to divert money spent in foreign wars and helping foreign countries and spend it here at home. That’s where it’s needed the most.

I highly recommend you watch A Place at the Table. Educate yourself on the subject and ask our government to stop wasting our tax money overseas and spend it where it’s needed: to feed this country’s children.

What do you think? Can we do it? Please post your comments below.

Gluten- Free Dairy- Free French Cooking

At a time where many of us are suffering from Celiac disease, gluten and/or dairy allergies or intolerances, this cookbook comes as a breath of fresh air.

I am a lover of French food but also someone who now avoids gluten and milk, after developing an intolerance during my third pregnancy 8 years ago. I was intrigued an thrilled after reading Chef Alain’s book to discover how I could still continue to cook and enjoy the foods I like without using gluten and dairy.

From Alain’s basic explanations of human digestion, our immune system and what these intolerances and allergies look like, to his testimonials and suggestions on how to travel, cook, shop and live GF, this French cookbook is a must have for anyone who loves to eat and cook. Whether or not you are gluten and dairy free, this is unarguably the healthiest way to cook for many of us.

And now Chef Alain has made it the tastiest as well!

Chef Braux has done it again – another original, intelligent, and delicious cookbook – this time filled with Paleo Diet recipes that we haven’t seen or tasted before. These original Paleo recipes are filled with unusual flavors, variety, and nutrient density that anybody can enjoy. I look forward to sharing this book with my patients. My real hope is that someone comes along, chooses 12 of these recipes and decides to sell them prepared to go. Congratulations!

Prior to enjoying Alain Braux’s latest book triumph Paleo French Cuisine I thought that to be somewhat oxymoronic idea, mistakenly associating all traditional French food with the stereotypical crusty baguette and beret. Thankfully, this book has clarified those muddy waters. This is akin to a field-guide for healthy gourmands, providing you with a step-by-step process from farmers market to table. Full of helpful information, from the roots of the paleo movement, to the link between health and food to simple tips for healthy shopping, ingredient selection, healthy food preparation and finally – the fantastic recipes. Of course you’ll see the Classics of French Cuisine in the Coq au Vin, but also the new and delightful Raspberry Muffins Frangipane or Gourmet Chocolate Pudding. If you’re laboring under the delusion that paleo cooking is all meat and boring in its selection then this is exactly the book you need!

- Dr. Amy Neuzil, ND author of DIY Health: For Women.

Chef Alain Braux has created another mouthwatering masterpiece in Paleo French Cuisine. The depth of information about the background of the Paleo movement, Chef Alain’s expertise on healthy food preparation, and the delicious recipes with a French twist make this book essential for anyone tempted by the benefits of eating Paleo.

The recipes and resources in this book inspire creativity in the kitchen so that living a healthy, clean lifestyle becomes a pleasure, instead of a chore. This book promises to be a staple in my kitchen and a critical resource for my clients.

Thank you Maureen. Chef Alain

“I had the pleasure of reviewing Alain Braux’s Cookbook, “Paleo French Cuisine”. It was so wonderful to see a cookbook that actually explained Celiac Disease and Autism and how one’s diet can heal. The detail that he went into is so wonderful to see and this is extremely helpful for those who are first diagnosed because many doctors don’t spend the time to explain or even offer Paleo or GFCF options to their patients as a way of finding relief. My nephew was diagnosed with Autism (PDD-NOS) and I was thrilled to witness complete recovery after 3 months on a strict GFCF diet.

I have been cooking Gluten Free/Casein Free for over twenty years and also create and serve meals that are not only gluten free, but are also free of the top 8 allergens; the recipes in Alain’s book are easy to understand and easy to execute. Alain has done a wonderful job and I hope you enjoy this book as much as I have.”

Christine Marquette, RD, LD, CLT wrote a very nice review of Living Gluten and Dairy-Free with French Gourmet Food on her blog,

“Living Gluten and Dairy Free with French Gourmet Food was written by Alain Braux, who is a gluten and dairy-free chef and nutritherapist. His background includes working for over 40 years as a pastry chef, baker, and chef. About 15 years ago, he furthered his education in nutrition and began working as a “nutritherapist,” which is a term used in Europe for nutritionists who focus on using food for healing, as opposed to nutritionists who also work with supplements, homeopathy, and herbal medicine.”

Thank you Ms. Marquette.

“Chef Alain Braux is accustomed to a challenge. It is what he lives for and what gives him that extra drive. Cooking and consulting for a client family of 4 with a combined total of 140 food allergies? No problem. Being the Executive Chef and Nutritherapist at People’s Pharmacy in Austin, TX? But of course…”
