You know it, too much cholesterol in the blood is not good for your health. The excess cholesterol is what is called a silent killer. You feel nothing but:

Your arteries clog quietly and gradually. The blood flow which supplies your heart, brain, kidneys, thighs) and legs decreases and becomes a trickle. Your body is not sufficiently fed by your bloodstream and therefore does not fulfill its duties adequately.

Then comes angina pectoris, renal failure (which can lead to dialysis), arthritis of the lower limbs which prevents you from walking normally or grabbing something without pain.

If you wait too long and are unlucky, pieces of atherosclerotic plaque can break off and clog one of your small caliber arteries. Then you are possibly facing a myocardial infarction or stroke.

It is therefore important to keep you and your loved ones free from these health complications. Wouldn't you agree? Perhaps you've already tried one or more anti-cholesterol diets? And you probably have quit... and you are determined to take medication against cholesterol.

Please don't feel you're the only one. 95% of those starting a diet give up very soon. A famous French TV presenter said he had lost 2 tons, but he was still too big... We begin a diet to lower our cholesterol (or lose weight), abandon it, and then try another regime. And so on and so forth.

What is the problem with cholesterol diets?

Your doctor or dietitian can give you dietary advice. But this is only general advice. The result is often bland food that you eat without pleasure. So you go back to your old habits. Right?

The vast majority of doctors or dietitians do not give delicious and tasty recipes to lower your cholesterol. And the vast majority of chefs do not know any recipes for lowering your cholesterol.

Do you know about the French paradox? A study was carried out on the inhabitants of South-western France for _15 years. Despite an overall diet higher in fat than the American diet, even including the lack of exercise and the French people's infamous smoking habits, the rate of myocardial infarction was still 4 times lower than that of Americans.

The many recipes provided in Chef Braux's book are from the South East of France (Nice). The Mediterranean cuisine prepared in this region is very close to the Cretan cuisine, a country where the rate of myocardial infarction is 9 times lower (or even 20 times, according to some studies) than Americans.

Even if you are taking anti-cholesterol pills, your doctor will probably say that this is not enough. You need to eat a healthy diet. Statin drugs indeed lower your bad cholesterol and slightly increase your good cholesterol. But what is especially dangerous with cholesterol deposits - is their oxidation (like iron rusts when being exposed to prolonged moisture).

If the cholesterol plaques in your arteries are constantly exposed to high concentrations of free radicals, they will continually get thicker and thicker in your arteries because cholesterol's job is to patch up the damages created by continuous oxidation caused by free radicals. Eventually, your arteries will clog. And statins can't do a thing about it.

You see, statins are not the panacea they are made out to be. Not to mention that not everyone supports these kinds of drugs and their potentially nasty side effects.
